Chef Educator Named to National Pastry Board

Chef Mary Theresa "Tree" McCann, a chef educator at the Academy of Culinary Arts at Atlantic Cape Community College, was recently appointed to a national board for pastry chefs.

The Ventnor resident is a certified executive pastry chef.  She was appointed to the inaugural National Pastry Committee by the American Culinary Federation. The new committee includes 12 pastry chefs from across the country who will foster certification and professional opportunities for members, with an emphasis on the artistry and education component of the baking and pastry field. McCann is co-chair of the Northeast region.

In addition, McCann is founding a local chapter of the national Women Chefs & Restaurateurs organization. The local "exchange" will offer networking and education events for chefs in Atlantic, Cape May and Ocean counties and provide scholarship opportunities for Academy students.

The mission of Women Chefs & Restaurateurs is to promote and enhance the education, advancement and connection of women in the culinary industry. It was formed in 1993 by eight of the nation's top women chefs and restaurateurs and has a membership of more than 2,000.

The organization's newsletter, "Entrez!," published an article by McCann called "Setting the Global Table: A Recipe for Inclusion." The article detailed a session on embracing diversity in the culinary field that McCann attended at the 2008 WCR National Conference in New Orleans.

McCann has an Associate in Arts degree in liberal arts, a bachelor's degree in business administration and a master's degree in hospitality management. She has completed professional training in chocolate and sugar specialties at International Zuckerschule, Zurich, and Fachschule Richemont, Lucerne, both in Switzerland; and International Pastry Arts Center, White Plains, N.Y. She also completed an intensive nine-day class in ice cream production at Penn State University in January.
