Beer Batter Seafood Medley

Ingredients:

Winner of the ACA's 2006 Seafood Festival Recipe Contest

Method of Preparation:

  1. Combine flour and beer. Do not over mix; mixture should be the consistency of pancake batter.
  2. Let batter rest in refrigerator for 15-20 minutes.
  3. Lightly dredge seafood in flour, dip in batter and deep fry until crisp and golden.
  4. Drain well and garnish with lemon wedges.
