Ingredients:
4 ea. Pieces of Salmon (6 oz. each)
Preheat oven to 375 degrees F. Place the salmon on a pan, allowing enough space between each piece of fish for easy removal. Brush each piece of salmon with the glaze. Place fish in a 375-degree oven for 15-20 minutes. After 10 minutes, glaze the salmon again and bake to desired doneness.
Place a piece of salmon on each plate along with the salsa and a wedge of lime. Garnish each plate with additional chopped cilantro if desired. Suitable accompaniments for this dish are jasmine rice, wild rice, roasted red bliss or mashed sweet potatoes.
1 C. Pineapple, medium dice
1 C. Papaya, medium dice
2 Tbsp. Red Bell Pepper, small dice
1 Tbsp. Cilantro, lightly chopped
2 tsp. Lime Juice, fresh
½ tsp. Jalapeno, fine dice
½ tsp. Ginger, fine dice
To Taste Salt & Pepper
Combine all salsa ingredients and allow flavors to blend for at least two hours
½ C. Light Brown Sugar, packed
2 Tbsp. Tamarind Concentrate
1 Tbsp. Pineapple Juice
1 tsp. Dark Soy
1 tsp. Ginger, fine dice
½ tsp. Lime Juice, fresh
Combine all ingredients in a small saucepot and bring to a simmer. The glaze will have the consistency of syrup.
