Wine & Dine Series - New for Spring!

The Academy of Culinary Arts is proud to partner with Hawk Haven Vineyards to bring you this exciting new series that incorporates wine tasting with our culinary workshops. All classes have a 21 years of age or older requirement.

I Love You, Let’s Eat

A class that blends demonstration and hands-on activities with wine tasting.  The menu features classic shrimp bisque, petit filet, roasted brussels sprouts, potatoes au gratin and finishes with chocolate mousse.  Menu paired with featured wine samplings from Hawk Haven Winery.  Come and celebrate Valentine’s Day with someone special.

Kettle of Fish

Crab and Salmon are the stars of this show.  A blended class of demonstration and hands-on will teach students to make a delightful crab and corn au gratin to serve with cedar-planked salmon in a honey lime glaze with grilled scallions and red bliss smashers, finished off with a praline soufflé.  A lighter selection of Hawk Haven wines for tasting will be provided.

Wood-Fired Feast

This class is special as it highlights the Academy’s beautiful wood-burning oven!  Learn to cook in a classic style wood-fired oven with a menu featuring “roasted roots”, hot olives, and classic margherita pizza, sausage and pepperoni and seasonal fruit served with homemade vanilla ice cream.  Outdoor dining, weather permitting.  Sip some wine under the stars thanks to Hawk Haven.
